Dark Chocolate Orange Cake, Japanese-style and gluten free
23 cm round shape, 8 to 12 members

Material:

Dark chocolate (crushed) 230 g
Unsalted butter 70 g
Egg yolks 6
2 tablespoons of orange peel (scrape)
6 egg white
Sugar 100 g

<Orange Cream>

Fresh cream 230 g
1 teasp orange juice
2 tablespoons powdered sugar
Orange peel (for shaving, for topping) Appropriate amount

How to make:

1. Preheat the oven to 140 ° C. Put a thin type of oil (out of quantity) in the mold.

2. Make a cake. Put dark chocolate and butter in the bowl and take it out every 15 seconds with a 600 W microwave oven and mix it until it melts until the chocolate melts.

3. Add yolk and orange peel and mix well.

4. Put egg whites in another bowl and whisk with a high speed hand mixer until whitish. Add sugar, whisk quickly to the extent that the tunic makes a bow.

5. Add 1/4 volume of (4) to (3), add the remaining (4) until mixing and mix gently so as not to crush the egg white bubbles.

6. Bake (5) into a mold and bake for 45-50 minutes in an oven preheated to 140 ℃.

7. Make an orange cream. Pour cream, orange juice, sugar into the bowl and whisk with a hand mixer.
