8 Tips to Nail a Mirror Cake (how-to video)



You won't be able to take your eyes off of this beautiful cake when it's done! The shiny mirror cake is all about the right technique and perfect timing. It may sound hard to make but don't worry, your cake will turn out just as great as long as you pay very good attention on the little details. It's a good thing to look at the whole video tutorial a couple of times to have a vision on what you're gonna do.

First thing is the cake. In the video is using a round vanilla sponge cake that's cut in 2 even layers. You can easily make them first with a basic cake mix from the store. Spread the strawberry jam on the bottom than put the first cake layer on top of it, freeze about 30-60 minutes until they are firmly sticked together. While waiting on that, you can make your own white chocolate mousse or you can just buy some at town.

When the first layer is freezed, you're going to put the second layer after you pour the rest of the chocolate mousse. Here you need to gently press the cake so it will stick nicely with the mousse. Put in the freezer for a night to make sure that the chocolate mousse is 100% frozen. You're now ready to prepare the glaze.

To make a perfectly mirror glaze, here are some tips that might be handy.
- put in the gelatin sheets after you turn off the heat
- After the gelatin is mixed, you have to strain the glaze so there won't be any air bubbles
- Divide the glaze into 3, and put in a few drops of food coloring (it doesn't has to be red)
- When you mix together the 3 different colored glaze, don't over mix it. Just swirl it with a chopstick a few times
- Make sure the temperature of the glaze is 90-96F
- You have to pour the glaze quickly before it gets colder and sticky. This will make it not able to glide smoothly on the cake
- Pour the glaze with a circular motion starting from the center to the outside of the cake
- If you think the glaze is to thin, do not put another layer on top of it because it will end up being lumpy and not glossy anymore
