Café-Style, Mini Crème Brûlée Cheesecakes (how-to video)

Are you tired of the same old-fashioned cheesecakes? This Mini Crème Brûlée Cheesecakes might be your answer! As simple as making an ordinary cheesecake, this crème brûlée one can make your dessert-time more special.

Use biscuits as the cake’s base by crushing them. You can use a food processor or crushing them manually as shown in the video. Combine the crushed biscuits with melted butter. You can prepare either cupcake trays or bowls to bake the biscuit base. Each tray should be ¼ full with the biscuit base.

For the cheesecake filling, prepare cream cheese, sour cream, sugar, eggs, and vanilla extract and whip them together until smooth. As soon as the biscuit base is baked, distribute the cheesecake filling on top of the base. Bake them for 18 minutes.

The fun part is to caramelize! Cool down your baked cake and scatter some sugar on top of it. Prepare your culinary torch and melt the sugar with swirling motions until it’s caramelized. Your topping is done!

The soft texture of filling combined with caramel on top is ready to serve. Your Crème Brûlée Cheesecakes is just comparable with the ones on the restaurant and cafes.

Crème brûlée, also known as burnt cream, crema catalana, or Trinity cream is a dessert consisting of a rich custard base topped with a contrasting layer of hard caramel.

The earliest known recipes for crème brûlée appear in the Catalan cookbooks Llibre de Sent Soví (14th century) and Llibre del Coch (16th century). The recipe included a custard cream, over which sugar was poured and subsequently burnt with a hot iron rod, creating the characteristic burnt crust. (Wikipedia)
